Hummus

Hummus

Whoever thought of mashing a bean into oblivion with a few choice ingredients was absolutely genius! Hummus may just be the bean dip or spread of the gods. Starting with the ubiquitous garbanzo (or chickpea) bean it is an easy weekly staple. Simple to make, it can be used as a dip for crudite, a spread for sandwiches or just eaten with a spoon. Enjoy! 

Recipe

2 15-ounce cans garbanzo beans 

1 medium garlic clove, peeled

1 tsp sesame oil

¼ C fresh lemon juice

2 tsp sea salt

1 tsp fresh ground pepper

½ C garbanzo bean liquid

1 tsp black sesame seeds

1 tsp olive oil

1 tsp toasted sesame seeds

Drain garbanzo beans reserving ½ C liquid. Into a food processor bowl add garbanzo beans, garlic, sesame oil, lemon juice, salt and pepper. Process until incorporated. Stop and scrape down sides of bowl. Add garbanzo liquid and process until smooth. Scoop mixture out into a medium bowl, add black sesame seeds and mix in gently. Serve in a decorative bowl with a drizzle of olive oil and sprinkle of toasted sesame seeds on top. Yields 2 heaping cups.
